Cocoa powder
Baking powder
Baking soda
Salt
All-purpose flour

Preheat oven to 325 F or 160 C. Prepare a 9 x 13 inch pan with parchment paper or grease lightly. In a mixing bowl, combine sugar, baking powder, baking soda, cocoa powder, salt, and flour. In another mixing bowl whip egg whites until soft peaks form. Gently fold applesauce and vanilla into egg whites. Fold the egg white mixture into the dry ingredients until just moistened. Pour mixture into the prepared pan and smooth out. Bake 25 to 28 minutes, or until a toothpick inserted comes out clean. Cut into 24 squares. Source: NSFGA.
